Dry Egg White
Use in place of Meringue Powder in Royal Icing Recipes to get a stronger Royal Icing.
Also an ingedient in Gumpaste.
Egg whites are different than Meringue powder. Meringue Powder contains egg white but also has other ingredients such as corn starch. Egg whites are pure Egg Albumin with no additives. It can be used in powdered form or reconstituted using a 1 to 1.5 ratio of Powder to water. ie. 1 oz powder to 1.5 oz of water. Mix together and let sit, possibily overnight. It is pasturized so there is no potential of contanimation with Salmonella.
